If I remember correctly (...wait, checking... YES!)
there was an article (better say four) about Atari in TV and Movies at TheAtariTimes
Check them out
http://www.ataritimes.com/article.php?showarticle=70
http://www.ataritimes.com/article.php?showarticle=71
http://www.ataritimes.com/article.php?showarticle=72
http://www.ataritimes.com/article.php?showarticle=73

I didn't read them recently, so I didn't check if all the finds here were already listed or there are some new...

Fab - looks like the ST was actually running too judging by the font and the white screen (probably just using the VT100 emulator and pumping the text down the serial port for effect perhaps?)
FireBee, Falcon -Soundpool case: CT63@95Mhz + 14MB/512MB + 16GB SSD + FPU + Phantom 25/50 + SuperVidel + SoundPool FDI + FA8 + ADAT + Eiffel, TT030: 4MB/16MB + Crazy Dots, Mega"SST" 12, STbook, STacy 2, MegaSTE, STE: Desktopper case, IDE interface, UltraSatan (8GB + 512Mb) + HXC floppy emulator. Plus some STE's/STFM's

Thought it was using some sort of a word processor.
But you are probably right.

Well, Dave Grohl (Nirvana, Foo Fighters) made a great documentary about Sound City, a legendary music studio, where a lot of classic albums were recorded. In this documentary a well known producer, Keith Olsen, is mentioned and a photograph of him in a studio is shown (not the Sound City studio, but a competing all digital studio down the road). Lo and behold, an Atari Mega ST is in the background! Later on in the documentary they also mention ProTools (on Apple), which a lot of artists back then called SlowTools

For those who like spotting these things, there's an Atari ST quite visible at the start of the latest Jason Bourne movie.

This seems odd in 2016 - is there an '80s / '90s flashback scene or something?

No its set in 2016 during a scene set in what's best described as a slightly more underground hackspace. It's not used at all, just visible sitting on the same desk as Julia Styles's character puts her laptop down to work.
